Simple and satisfying, these zesty quesadillas are grilled — but you can also pan-toast them over medium heat or cook them in a panini press.

Preheat grill to medium heat; grease grates well.

In a medium bowl, lightly crush DORITOS® FLAMIN' HOT® Nacho Flavored Tortilla Chips with your fingertips; set aside.

In a small bowl, toss chicken with taco seasoning; set aside.

Sprinkle 1/4 cup cheese on one half of each tortilla; top cheese evenly with seasoned chicken, jalapeños and crushed tortilla chips. Sprinkle remaining cheese over top. Fold each tortilla over to enclose filling. Brush outside of tortillas with oil.

In batches, grill quesadillas for 4 to 6 minutes, turning once, or until grill-marked, toasted, filling is heated through and cheese is melted.

Slice each quesadilla into quarters. Serve with sour cream, hot sauce and lime wedges.
Tips & Tricks
Substitute taco seasoning with Cajun, Tex-Mex or barbecue seasoning.
