Preheat oven to 375°F.

In a bowl, combine all of the ingredients for pancakes and stir until large lumps disappear (do not beat or over mix). Let stand 1-2 minutes to thicken.

Pour batter into a lightly greased muffin tin, filling each cavity (or muffin cup) halfway.

Place your choice of berries into each cup.

Bake at 375°F for about 15 minutes or until golden brown (Insert a toothpick. If it comes out clean, it is done).
